National Celiac Disease Awareness Day

September 13, 2020 is National Celiac Disease Awareness Day in the United States.
Celiac disease presents on a spectrum (meaning, there are varying levels of sensitivity among those affected) and manifests in different ways for different people (meaning, there are different signs and symptoms of exposure unique to each person affected).
Gluten is the trigger. Some people have a high tolerance and merely have to be cautious to thoroughly wash their hands before eating a gluten free meal. Others cannot walk into a pizza restaurant because the amount of gluten in the air will cause days of symptoms.
As with many autoimmune and digestive afflictions, celiac is mostly a silent disease. This means, if the affected person doesn’t tell you they have been diagnosed, then you probably won’t know they have it.
